Easy Omelet

I am doing all the cooking for my nutrition plan during the P90X program. Since I work in IT and not in a kitchen, I am always looking for quick, easy and HEALTHY recipes. This easy omelet recipe is courtesy of Paul Dean. My wife and I were watching one of her shows and she demonstrated this process. It looked delicious and easy. Here is the breakdown:
Ingredients
- 4 large eggs
- Salt and pepper
- Zip-lock bag
- Add-ins
My Add-ins:
- Shredded Colby
- Pepper
- Ham
- Chopped Peppers
- Chopped Mushrooms
Directions
In a medium mixing bowl whisk together eggs, salt, pepper and the add add-ins. Grab a coffee mug and place the Zip-lock bag in the cup and fold the access bag down the cup. Pour the mixture into the bag and close up the bag. Boil a pot of water and bring it down to a medium simmer. Drop in the sealed omelette bag in and make sure all the plastic bag is in the pot and not hanging over the sides. Let the bag cook for 10-12 minutes. Remove the bag from the water and open it to verify it is done cooking. If it is cooked, place it on a paper towel. After allowing to cool for a minute, open the bag and poor the omelet onto a plate.
It goes great with some whole grain toast!
